Inspired by the warm, frothy, nostalgic memories of our childhood sipping Mexican hot chocolate, we bring you Grain Free Mexican Chocolate Cookies. Made with a blend of almond flour, cocoa, a dash of cinnamon, and phantom hot-chocolate-mustaches (okay, that’s not really as much an ingredient as the spirit and heart of these cookies, but you get the idea), these crunchy, rich chocolate cookies take us back. Imagine: the smell of buñuelos, pan dulce, conchas, and arroz con leche all wafting together from the kitchen, where grandma is stirring a huge pot of melted chocolate and cinnamon sticks. Just as she ladled out her hot chocolate into smaller mugs for her loved ones to sip on, we share these bite-size, Abuela Approved chocolate cookies, for you and your family to snack on.
Mexican shortbread cookies, also known as hojarascas, or pan de polvo, are sweet, crunchy, delicious cookies that our family makes (and eats!) by the dozens. Fond are our memories of bringing these cookies home from the local bakery in Laredo, and always having them out on the table, or in our cookie jars. Our grain free versions of these nostalgic cookies are thoughtfully baked to perfection, Abuela Approved, and quite possibly the next best thing since the simple pleasure of playing in fallen leaves. But—unlike cookies—we never want to put words in your mouth. Instead, we’ll just tell you that these Grain Free Mexican Shortbread Cookies are made from a lightly sweetened blend of almond flour, pecan pieces, with a dash of cinnamon..
Dearly Beloveds, we’re gathered here today to celebrate a food that holds a special place in our family’s hearts, (and on the dessert table, amongst the spread of colorful homemade sweets for every quinceañera, anniversary, & special occasion): the Mexican wedding cookie! We have many memories of cooking hundreds—hundreds!—of these in the kitchen with our Grandma Campos before each of our siblings’ weddings. Later, after embarking on our journey to health, these were one of the first sweets we recreated in a grain free and dairy free version, so we could continue to make—and bake—the beautiful memories that accompany these delicious cookies. Our Abuela Approved Grain Free Mexican Wedding Cookies are made from a blend of almond flour, pecans, powdered sugar, and cinnamon for all to enjoy. Sounds pretty dreamy, right? (OOP! Here’s our cue, the moment we’ve all been waiting for:) You may now eat the cookie.
Available in a resealable bag, which may mean that stealing from the “cookie jar” just got a whole lot easier.
